Jonathan uses Cubase as a host for Kontakt Komplete Ultimate (played via the Nektar) and SampleModeling VSTs (for the EWI). However, all sound is mixed through an analog mixer, not a DAW proper.

That's an EWI 5000. Electronic Wind Instrument, AKA the Space Flute! It's a MIDI controller operated by breath, bite and fingers. The EWI is using its internal sounds for music generation. Generously donated by Kaurmath and is known as Athene!
